Cooking and eating habits in the UK have changed significantly over the past few decades, with lifestyle changes, migration, changes to household structure, food safety issues, the economy, environmental and ethical issues, and the rise of online shopping all representing key factors in consumers' food choices. Most poignant, however, has been the shift away from traditional cooking and eating habits in recent decades, with busier lifestyles, a rise in working households and an increase in smaller households leading to less formal meal times and increasingly disparate family eating occasions.

The poor economic environment within the UK has also had a significant impact on consumers' food choices in recent years, with household budgets continuing to remain squeezed since the recession as a result of stagnant wage growth, welfare reforms and high inflation, which has led to the onset of a living costs crisis for many consumers of late. Consequently, a rising number of consumers have opted to trade down when shopping for groceries, with discount supermarket chains, such as Lidl and Aldi, continuing to reap the benefits of this new found demand for food bargains.

However, the continued popularity of low-cost food products has had a resounding impact on the structure of the UK grocery market, with the big four' continuing to lose market share discounters in recent years. However, the success of the low-cost chains could soon be stopped in its tracks, with several major retailers, including Tesco, ASDA and Sainsbury's, all announcing major plans to invest in reducing prices across their own-brand and branded product lines in 2015.

At the same time, ongoing food deflation - which was first observed towards the end of 2014 - as well as a contraction in oil prices and stronger wage growth, is likely to result in more prosperous grocery shoppers over the next few years. This, in turn, is likely to lead to increased spending on premium food products, as well as on branded goods. Renewed consumer confidence, along with a more positive economic outlook and more flexible household budgets, is also likely to result in a resurgence in the eating out sector, with the restaurants market - which has continued to observe flat growth in recent years - forecast to rise by 5.7% between 2015 and 2019.
